Zucchini and Cauliflower Rice Rolls

Starting to eat fully raw on more days, so today for lunch I made these sweet and savory veggie rolls.


Ingredients
1/2 zucchini, thinly peeled
1/2 cauliflower head
juice of 1 lime
1 green onion, finely chopped
1 tbsp tamarind paste (optional)
1 medjool date, chopped
carrots, thinly sliced
cucumber, thinly sliced
pineapple, thinly sliced
handful of cilantro

Sauce
1/3 avocado
1 passionfruit
1 tsp dried chili
a couple sun dried tomatoes


Thinly slice or use a peeler to make the zucchini strips. Using a food processor, or if you are like me and don't have one, finely chop the cauliflower until it resembles rice. Add in the lime, green onion, tamarind and date. Pulse until combined, or if not using a machine mix and mash until that date is smooshed into all the other ingredients. Lay out a zucchini strip, at one end spread about 2-3 inches of the cauliflower rice, pressing the mixture down with your fingers. Next, add the carrot, cucumber, pineapple and cilantro. Tightly roll and eat that shiz!

For the sauce blend or mash ingredients together then strain.
